Add jupyter notebook tests to Github CI tests

Description

• Run all post-training jupyter notebooks in Github CI tests only when github event is schedule or any ipynb file is changed in the PR
• Update documentation to run jupyter notebooks on VS Code
• Update/fix post-training notebooks
